A brand-new hotel is opening in London with an all-day restaurant and a new bar and terrace overlooking the city.

This is an opening Head Chef role. You will shape the food, build the team, and set the standards from day one.

The role

  • Lead menu development across all dayparts
  • Create seasonal menus and run tastings
  • Recruit, hire, and build the kitchen team
  • Train, coach, and develop the brigade
  • Set up prep systems, standards, and service structure for an opening
  • Oversee ordering, stock, rotas, and kitchen controls
  • Work closely with senior hotel teams to deliver a smooth opening and strong daily operation

You must have

  • Proven leadership in a hotel kitchen at Head Chef or Senior Sous Chef level
  • Strong background in busy, high-volume restaurant service
  • Confidence running fast, structured service
  • A hands-on leadership style with clear training methods
  • Strong standards around produce, seasonality, and consistency

Package

  • Salary circa £65,000+ with flexibility for the right profile
